Today, an alternative recipe… The first time we talked about the bread “pane carasau”, we suggested a classic recipe, the “Pane Frattau”, but today we will use the pane carasau to get some sort of crispy vegetarian lasagne.
Ingredients x 4 people:
- Pane carasau(about 200 gr, or even more, it depends on you)
- 400 g of ricotta
- Red cherry tomatoes
- 250 g of spinach
- Extra vergin olive oil
Brush the bread with olive oil and salt. Add rosemary to flavor and then brown in the oven at about 180 ° C. Blanch the tomatoes in boiling salted water and blend the tomatoes until you have a creamy sauce. Season with olive oil, salt and a pinch of pepper. Wash the spinach and remove their harder stalks and cook them in a pan for 3-4 min with a knob of butter, salt and pepper. Knead the ricotta cheese with a little of chopped chives, salt and a pinch of pepper. With a spoon formed quenelle of ricotta and lay them on the plate. At this point place the bread on the quenelles, the spinach, and then drops of tomato sauce. Decorate the dish with cherry tomatoes into pieces.
